Before it disappears from my calendar, here’s a good autumn fruit recipe:
Apple, Pear and Frangipan Tart
Ingredients:
- Pastry base
- 75g butter
- 50g caster sugar
- 2 eggs
- 50 ground almonds
- 50g self-raising flour
- 2-3 drops almond essence
- 2 apples
- 1 pear
- Icing sugar for dusting
To make the filling, beat the butter and sugar together, then stir in the eggs, almonds, flour and almond essence. Spread the mixture over the pastry base and add slices of apple and pear, pressing them into the mixture. Bake for about 35 – 40 minutes at 180C. Dust with icing sugar when cool.
Ok, so there’s nothing about how to make the pastry, but you can find that anywhere, or cheat a little and buy a pastry base. Also, I think reversing the apple/pear ratio is a good thing, as the pears seem to stay moister than the apples.
